A basic muffin recipe for all ages.

  • 2 table spoon butter
  • ½ cup molasses sugar
  • 2¬†small eggs
  • ½ cup full cream milk
  • 1 cup grated¬†fresh carrots
  • 1½ cup plain flour
  • ½ tsp vanilla essence ( optional )
  1. Pre-heat the oven @ 150 C
  2. Measure the flour and swift it twice and measure again to make 1½ cups.
  3. In another large mixing bowl beat the butter and sugar till it's soft and fluffy.
  4. Beat one egg at a time and mix well.
  5. Pour in the milk and incorporate well.
  6. Add in the grated carrots and mix gently using a wooden spoon.
  7. Mix the flour one ladle at a time and mix it well. Do not over mix, just enough to mix everything together.
  8. Bake for around 20 mts and see if the muffin is cooked through.
  9. Allow the muffin to completely cool down before decorating it.
  10. Notes :
  11. Do not try to open the oven door unnecessarily.
