Crispy Fried Chicken

- Chicken (cut in to medium size pieces) - 500 g
- Yogurt - ½ cup (you can use buttermilk to give an original taste)
- Paprika/chilli powder - 1 tsp
- Thyme (dried) - ½ tsp (Fresh thyme - 6-7 sticks)
- Caraway seeds (Shahi jeera) - ½ tsp (optional) This gives a warm spice flavour.
- Ground black pepper - ½ tsp
- Salt - ½ tsp
- Bread crumps / Oats - ½ cup
- Grated parmesan cheese - ¼ cup
- Paprika / chilli powder - ½ tsp
- Salt - ¼ tsp
- Egg - 1 ( I've used only the egg white)
- Plain flour - ½ cup (I've used wheat flour or atta)
- Mix all the ingredients for the marinade to the chicken pieces and keep it in the fridge for 2 to overnight.
- When its time for frying /grilling , take out the chicken and allow it to thaw for at least ½ an hour.
- Take 3 bowls.
- In the 1st bowl mix all the ingredients for crust till the salt, in the 2nd beat an egg and in the 3rd take out some plain flour /wheat flour.
- Now start to prepare the chicken by first dipping in flour and then in the egg and lastly in the crumps. Coat the chicken well with the crumps.
- If you're grilling place the chicken on a tray lined with parchment paper.
- Alternately, you can deep fry.
- Enjoy with a simple salad !
