Basic carrot muffin

- 2 table spoon butter
- ½ cup molasses sugar
- 2 small eggs
- ½ cup full cream milk
- 1 cup grated fresh carrots
- 1½ cup plain flour
- ½ tsp vanilla essence ( optional )
- Pre-heat the oven @ 150 C
- Measure the flour and swift it twice and measure again to make 1½ cups.
- In another large mixing bowl beat the butter and sugar till it's soft and fluffy.
- Beat one egg at a time and mix well.
- Pour in the milk and incorporate well.
- Add in the grated carrots and mix gently using a wooden spoon.
- Mix the flour one ladle at a time and mix it well. Do not over mix, just enough to mix everything together.
- Bake for around 20 mts and see if the muffin is cooked through.
- Allow the muffin to completely cool down before decorating it.
- Notes :
- Do not try to open the oven door unnecessarily.
