This is a spicy and soul satisfying dish which is from the Travancore region of Kerala.  Mutton is usually referred to as Goat meat in Southeast Asia. You can make this dish with lamp meat too.. Goat meat is considered to be the healthier option. Another way of making this even healthier is by cooking it twice to remove the fat and also adding potatoes to it. Here potato is used to absorb the excess fat and salt of this dish. And that makes the potatoes very tasty too.. 🙂 Its your choice !

Serves : 4

Ingredients for the marinade :

  • Mutton – 500 g
  • Black pepper – 1/2 tsp
  • Salt – 1/4 tsp
  • Water – 1/4 cup

Marinate the mutton for at least 10 mts and cook it. You can pressure cook it to save time.

Other Ingredients:

  • Onion – 2 small (sliced)
  • Garlic – 5 (minced)
  • Ginger – 1″(minced)
  • Green chilli – 3 (slit in the middle)
  • Potato – 1 (cubed)
  • Curry leaves – 1 stem
  • Oil – 2 tsp
  • Salt – 1/2 tsp

Spice mix:

  • Chilli powder/ roasted paprika – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – 1/8 tsp
  • Garam masala – 1 1/2 tsp ( This is where you can replace the garam masala altogether with Chinese all spice powder)
  • Black pepper – 1/4 tsp

Method:

  1. In a pan when the oil is heated up add minced ginger and garlic along with the curry leaves.
  2. when the ginger and garlic starts to release aroma add in the onions and saute it for a few minutes.

  4. Now you can add the potatoes and the spice mix and roast it in low flame for a minute.
  5. Add water to it and the cooked mutton too. You can use the remaining liquid from the cooked mutton if you want to make it tastier.

  7. Stir and combine all the ingredients and close the pan with a lid and cook for 10 minutes till the potatoes are cooked. Do not over cook the potatoes.
  8. Now all the water must have reduced and the spices all absorbed.
  9. Sprinkle some more curry leaves and onion and serve hot.
  10. This dish goes with  mashed potatoes/ rice/ parata.

Notes:

  • This dish is tastier if you use coconut oil.
  • You can cook and keep the marinated mutton earlier in the fridge.
  • When you take it out of the fridge the fat will form like butter on top of the mutton. If you want you can remove the fat and  prepare it following the steps in the method.
