Avial is one dish which includes almost all vegetables. But to make kids eat these vegetables is a challenge. This recipe can be said as a beginners avail, which both kids and adults will love. This recipe calls for raw green cashew nuts, but since raw ones are hard to find I’m using dried ones which we normally get in super markets.

Cooking time : 15 mts

Serves : 4 -6

Ingredients :

  • Drumsticks –  3 to 4(cut into 3′ pieces)
  • Cashew nut – 1 cup
  • Raw mango slices –  1/2 cup (if raw mango is not available you can add either 1/2 tsp tamarind pulp or 1 table spoon yogurt)
  • Green chillies – 4 (slit in the middle)
  • Curry leaves –  5 stems
  • Water – 1/2 cup
  • Coconut oil – 3 table spoon (or any non flavoured oil)
  • Turmeric powder – 1/4 tsp

Ingredients to pulse in the blender:

  • Fresh grated coconut – 1/2 cup
  • Cumin seeds – 1/2 tsp
  • Green chilli – 1
  • Curry leaves – 1 stem

Method :

  1. Mix all the ingredients and cook in medium heat till the drumsticks are cooked and water is almost evaporated. If more water is needed add 1/4 cup.
  2. If you want to make avail curry then you can add more water as required.
  3. Grind all the ingredients to pulse. Only a few pulses are needed for avail. Do not grind it smooth.
  4. Add the coconut paste to the cooked drumsticks and mix well.
  5. Cook for one more minute and switch off the fire.
  6. Add in 1 tsp of extra coconut oil and few curry leaves and keep it closed with a lid till its time to serve.
  7. Its best to rest it for at least 1/2 an hour.
