Homemade food is a very comforting word when we think of preparing it for kids. Kulfi is an ice cream which is safe from any stabilizers or emulsifiers to make it thick and creamy. This ice cream contains no eggs and a simple and easy preparation which can be served to vegetarians too.

Kulfi is the ancient method of preparing ice cream in Indian sub-continent.  If you’re not a fan of cardamom you can replace it with vanilla essence.

To speed up the process you can cook the milk and sugar in a pressure cooker till 2 whistle and open the lid when the pressure is completely gone. The milk will turn light pink in colour and will be reduced to half it’s original measurement.

Another method is to replace sugar with 1 tin of condensed milk.

Preparation time : 10 mins

Cooking time : 1 hour

Serves : 6

Ingredients :

  • 1 litre full cream milk
  • 3/ 4 cup sugar
  • 5 cardamom pods powdered
  • 1/4 cup pistachios ( keeping aside some for the garnishing, powder the rest)

Method :

  • It’s difficult to powder the cardamom on its own. Add pistachios to the cardamom and powder it in a blender and keep it aside.
  • In a medium size pan add milk and sugar and bring it to rolling boil, stirring continuously.

  • When the milk starts to boil,  keep the fire as low as possible and cook the milk for around an hour. To speed up the process you can cook the milk and sugar in a pressure cooker till 2 whistle and open the lid when the pressure is completely gone. The milk will turn light brown in colour and will be reduced to half it’s original measurement.

  • Add cardamom and pistachios powder and cook for another 5 mts.
  • Allow it to cool and freeze.
  • If you want to have a creamier texture to the kulfi, after 1 hour in the freezer take out the mix and beat few times with a hand mix.
  • Freeze it again for another 3 hours.
  • While beating if it becomes frothy, allow it to settle down or mix it with a spoon in to the cream mix.
  • If there is form on top of the ice cream, it’ll take a longer time to freeze.

  • You can fill it in popsicle moulds and freeze it too.
  • Since we’re beating the ice cream it will melt fast. If you want a slow melting dense ones (like a popsicle) you can avoid beating.
  • If you’re in any doubt that the ice cream will not be creamy, add 1 tea spoon of corn flour mixed in few tea spoons of milk and add it to the reduced cream and cook for another minute.
  • Enjoy !
