When you think about preparing beef it has to be either a classic dish or a quick and easy stir fry. Here a quick and easy stir fry with vegetables where you get all the goodness in one dish and don’t have to soil in kitchen after a busy day’s work.

All the hard work can be done earlier, even a day ahead, and only last minute cooking needed that too just before serving !

You could call this an Indo-Chinese-American dish 🙂 .. A true fusion dish which is exotic.

This is done is 3 stages.

  1. Marinating the beef
  2. Making the sauce
  3. Chopping vegetables
  4. Frying beef in batches
  5. Final cooking

Of the 5 stages , all 4 stages you can be done earlier and store in the fridge in an air tight container.

You can serve this stir fry with rice, fried rice, toasted baguette/bread, or even pasta / noodles !

You need to add only half of the recommended water for making a stir fry. Here I’m making it with gravy.

Preparation time : 20 mts

Cooking time : 30 mts

Serves : 8

Ingredients for marinating :

  • Beef – 500 g (sliced thinly against the grain)
  • Salt – a pinch
  • Garlic – 2(minced)
  • Pepper – 1/4 tsp (white or black)
  • Bi-carbonate of soda – a pinch / 1/8 of a tsp

Mix everything together and keep it in the fridge covered for 1 hour.

Ingredients for sauce:

  • Crushed garlic – 5
  • Crushed ginger – 1″
  • Spring onions – 2 plant (you don’t have to cut these)
  • Green chilli – 2 (optional)
  • Coriander leaves – 1 plant
  • Soy sauce – 2 table spoon
  • Oyster sauce – 1 tsp (you can use mushroom based ones)
  • Honey – 1 tbs
  • Water / beef stock – 3/4 cup

Boil all these ingredients in and reduce it to half its measurement. Allow it to cool down, strain and keep in an air tight glass container ( maison jar ). You can make big batches of this sauce and store in the fridge for later use.

Other Ingredients for stir frying:

  • Onion – 1
  • Big red chilli – 1 (remove seeds,cut into long thin slices)
  • Bell pepper (Capsicum) – 1 (cut into cubes)
  • Carrot – 1 (medium, cut into thin big slices)
  • Broccoli  – 1 (bite size pieces)
  • Spring onion – few stems (cut small)
  • Green chilli sauce – 1 tsp (optional)
  • Oil – 4 table spoon

Method:

  1. Marinate the beef.
  2. Make the sauce.
  3. Add 2 table spoon of corn /all purpose flour to the beef and mix it very well.
  4. This is the 4th stage where you fry the beef. Heat oil in a wok or a large pan.
  5. When the oil is heated, fry the beef batch by batch and drain it in paper towel. Beef should only be 3/4 th done.

  7. When the beef is finished frying, add the chopped vegetables in the same oil in which the beef is fried. If there is too much oil remove it. You’ll need only 1 table spoon of oil for the rest of the cooking.
  8. when the vegetable are slightly cooked, add in the fried beef and saute for a minute. You can add the strained sauce and chilli sauce and allow it to bubble. If you think you need more sauce or more thickness for the gravy add 1/2 tsp corn flour in water / beef stock and add to the pan.

  10. When the beef is cooked and vegetables are soft to your preference take it out of the heat and serve piping hot.
  11. Garnish with spring onion.

Notes:

  • Since the beef is cut thinly, it’ll take only a few minutes to cook it.
  • Do not cook the vegetable too much, it should have a bite to it.

 

Chinese stir fry beef with Broccoli and Carrots
