A soup for all occasions. I would call this a miracle soup. When my kids are down with something this soup works wonders for them. I’ve made this soup as a non-vegetarian version. You can make it vegetarian by removing ham and chicken from this soup. Here I’m making the soup from scratch. You can save time by using chicken stock instead of chicken pieces and water but remember to adjust the salt since the store bought is a bit salty.

Serves : 4

Ingredients :    

  • Mushroom – 150g
  • Chicken – 100g (cut into medium pieces)
  • Ham – 2 slices, cut into small pieces (here I’ve used honey glazed ones)
  • Onion – 1 (small,chopped)
  • Potato – 1 (small, chopped)
  • Butter – 1 tsp ( I’ve used ghee which is clarified butter)
  • Plain flour – 2 table spoon ( I’ve used wheat flour or Atta)
  • Water – 2 1/2 cup
  • Fresh cream – 1/4 cup (optional)
  • Cardamom – 4
  • Cloves – 5
  • Ground black pepper – 1/4 tsp
  • Salt – 1/2 tsp
  • If you want you can use 1/4 cup chopped carrots too.. ( my carrots ran out.. :()
  • Few springs of spring onions for garnishing.

Method :

  1. In a hot pan add butter/ghee. When it’s melted add the plain flour/atta and saute and cook it in slow fire. You need to take your time doing this step. Roast the flour carefully without burning.
  2. When the flour is properly cooked and starts to release a nutty aroma add in the onions and ham pieces and saute some more.
  3. Now add the mushroom and potatoes.
  4. When everything is mixed together add water/ chicken stock slowly, ladle by ladle and stir and combine without making any lumps.
  5. Add in the whole spices, cardamom and cloves along with the chicken pieces.
  6. Bring the soup to a boil and close the pan with a tight lid and cook in slow fire for 10 mts.

  8. When the chicken is cooked, if you want you can take it out or shred it to small pieces. I’ve left it in there since my girl loves chicken in soup. 🙂
  9. Switch off the gas and mix in the fresh cream.
  10. Serve hot with toasted bread.
