This recipe is specially for the kids to make them eat healthy. For adults, you just have to add 1 tsp more of red chilli powder and make it spicy to go along with your cocktails. Here I’m using 2 chicken breasts cut in to small chunks. You need to marinate and keep it in the fridge overnight, only then it’ll be tasty.

Ingredients for marinade :

  • Chicken – 500g (cut into cubes)
  • Buttermilk – 1/2 cup (to make buttermilk take 2 tablespoon of yogurt and mix in 1/2 cup water)
  • Black pepper powder – 1/4 tsp
  • Red chilli powder – 1/2 tsp
  • Cumin powder – 1/4 tsp
  • Salt – 1/2 tsp
  • Mix all these ingredients and keep it in the fridge overnight. On the next day before frying take it out of the fridge and drain the buttermilk and allow it to thaw for at least 1/2 an hour. If you fry the chicken straight from the fridge it’ll absorb a lot of oil.

Ingredients for frying:+

  • Egg – 1
  • Plain flour – 1/2 cup (I’m using wheat flour/atta)
  • Bread crumps – 1 cup (you can use store bought or you can make you’re own, here I’ve used homemade bread crumps*)
  • Oil for frying

Method:

  1. Once the chicken pieces comes to the room temperature dip first in the flour one at a time. Coat the flour properly and shake off the excess from the chicken piece.
  2. Next dip the piece in beaten egg and last in the bread crumps. The order of coating should be correct for all the pieces.

  4. You can pack this in air tight container and keep in the fridge till needed. Remember to fry and use it on the day itself. If you’re freezing it, it’ll stay fresh for 1 week.
  5. Shallow fry or you can deep fry it.

  7. Here I’m shallow frying it in a frying pan.
  8. Cook on one side for 5 mts in low flame and 2 minutes on other side.
  9. Squeeze some lime on top of it and enjoy !

*Notes for making homemade bread crumps:

  • Bread – 4 slices, here I’ve used whole meal bread
  • Tear it in to pieces and dry roast it in a heated pan till it becomes hard. Once cooled add all the pieces in to a food processer/ blender and give it a few pulse.
  • You’re bread crumps are ready !
