This is an easy to bake recipe for any beginner in baking…  and to the lovers of  chocolate banana loaf. 🙂 . Bananas which are over ripe, even with some black spots on it are perfect for this recipe. You can use this as a bread for kids lunch pack or as a desert for your dinner with some vanilla icecream. You’ll need 3 bowls for this recipe.

Preparation time : 15 mts

Baking time : ~ 60 mts

Ingredients :

  • Unsalted room temperature butter – 125 g
  • Brown sugar – 100 g
  • Eggs – 2 (large)
  • Vanilla extract/essence – 1 tsp
  • Plain flour – 250 g
  • Baking powder – 1 1/2 tsp
  • Baking soda – 3/4 tsp
  • Banana – 4
  • Chocolate Chunks – 75 g(if you’re using chocolate chips 125g)

Method: 

  1. In the first bowl sieve together flour, baking powder and baking soda.
  2. In the 2nd bowl mash the banana leaving some chunks to bite.
  3. Take out another large bowl, in which you’ll be combining all the ingredients.
  4. In that large bowl, beat the butter and sugar till creamy and fluffy.
  5. Add eggs one at a time into the butter and sugar mix. Do not over beat. Just enough to mix it well. If your mix starts to curdle add one tsp of flour.
  6. Mix in the Vanilla extract.
  7. Carefully add flour one ladle at a time and fold to combine.
  8. Mix in the mashed banana and fold once again .
  9. Add the chocolate chunks/chips and fold one more time.
  10. Pour the mixture in to a well greased loaf tin, layered with grease proof paper and bake it for approximately 50 – 60 mts @ 140 C. Check with a skewer and see if it comes out clean.

Notes:

  • Key point to note when baking is all utensils should be completely dry.
  • Once you’ve kept the loaf for baking try not to open the oven door unnecessarily.
  • Since we’ve added banana you’ll have to consume it in 2 days or you can keep it in the fridge as long as a week.
  • Serve it with fruit compote and ice cream or sandwich it.
  • Temperature of the oven depends on how old it is. Since my oven is new I’ve set it at 140 C. If your’s is an old oven you can go up to 180 C and check around 40 mts.
