A simple, easy, tasty and healthy dish which can be prepared in 10 minutes if you’ve cooked mixed vegetables. And kids love it too ! 🙂 You can use Mixed frozen vegetables too. The vegetables mainly used for this are carrots, French/long beans, cauliflower, green peas.. be careful if you add tomatoes. It actually changes the whole dish. 🙂

Cooking time : 20 mts
Serves : 4
Ingredients :
- Potato – 1 (medium)
- Carrot – 1 (small)
- French/long beans – 5-6
- Onion – 1(cut small)
You can pressure cook or cook in a pan with 1 cup of water. If you ‘re cooking in a pan add 1/2 cup fresh/frozen peas at last 10 minute of cooking.
Spice mix:
- Chilli powder – 3/4 tsp
- Coriander powder – 1 1/2 tsp
- Turmeric powder – 1/4 tsp
- Garam masala – 1 tsp
Method:
- In a pan when the oil is heated add 1/4 tsp musturd seeds and allow it to splutter. Then add 1 stem of curry leaves and switch off the gas to add the spice mix and fry a bit.
- Now switch on the gas and add the cooked vegetables.
- If there was water remaining with the cooked vegetables add that too or add 1/2 cup water at this stage and bring it to boil.
- when the water is reduced, switch off the fire and add 1/4 cup thick coconut milk. If you are using fresh coconut milk cook the vegetables in the thin coconut milk instead of water and add thick coconut milk at the last stage.
