This is a ‘2 minute’ healthy filling dish you can have anytime you’re hungry.  You can use marinated or leftover chicken pieces for this dish. Here I’ve marinated the chicken pieces in Chinese sauces. You can use any types of leftover chicken pieces.

Ingredients:

  • Eggs – 2
  • Chicken – 50 g(cut into cubes / lengthwise)
  • Baby spinach – 1 ( handful ) here I’m using Chinese broccoli.
  • Big red chilli – 1/2 (or 1/4 tsp of chilli flakes)
  • Spring onion – 1 plant
  • Cheese – 1/4 cup (Cheddar / Parmesan )
  • Oil – 1 tsp
  • Pepper – a pinch
  • Salt – Since I’m marinating the chicken in Chinese sauces, I’m not adding any salt. If you’re using any other types of chicken a pinch of salt is needed.

Marinade for chicken :

  • Soy sauce – 1/2 tsp
  • Green / red chilli sauce – 1/4 tsp
  • Garlic – 1(minced)
  • Corn flour / all purpose flour – 1/2 tsp

Marinate the chicken pieces with the above ingredients and keep it in the fridge till needed. It’ll stay in the fridge for a couple of days. You can also keep it in the freezer.

Method:

  1. Beat the eggs till the egg white is well incorporated into the yoke. Add in the cheese and other ingredients except spinach and mix well.
  2. Keep a flat pan on fire and add oil.
  3. When the oil is heated add the chicken pieces and cook for 2 minutes. To speed up the process you can cover the pan and cook.
  4. When the chicken is half done add the spinach and wilt it a bit.
  5. Spread the chicken and spinach around the pan and add the beaten eggs along with a few dolops of cheese. If you’re using grated cheese mix it together with eggs and add.
  6. Lower the heat and cook covered.
  7. Flip the omelette carefully and cook on the other side. Alternatively, you can transfer it to the oven and cook for ~ 10 mts @ 180 C
