This is a refreshing and filling salad. Instead of oil yogurt is used in the vinaigrette. Yogurt contains a lot of beneficial bacteria that’ll do good things for your gut.
Preparation time: 15 mts
Serves: 4
Ingredients for salad:
- Baby lettuce leaves – 8 – 10 leaves
- Avacado – 1 (cut into cubes)
- Corn – 1 (cook in boiling water for 10 mts and remove the kernels from the cob)
- Baby tomatoes – 1 handful
- Blueberries – 1 handfull
- Onion – 1 (small)
Ingredients for the vinaigrette:
- Yogurt – 1/2 cup
- Avacado – a couple of pieces
- Mint/ basil (as preferred)- a few leaves
- Juice of 1 lime
- Chilli powder _ 1/4 tsp
- Black pepper – 1/4 tsp
- Salt – 1/4 tsp
Method:
- Wash and dry all the vegetables.
- Save a few pieces of avacado for the vinaigrette.
- Layer the lettuce leaves in the plate. If you want you can tear it into pieces too.
- Cut and place rest of the vegetables on top of it.
- In a mixer grind all the ingredients of the vinaigrette.
- Pour the vinaigrette over the salad.
- Serve it chilled/room temperature.
