This is a refreshing and filling salad. Instead of oil yogurt is used in the vinaigrette. Yogurt contains a lot of beneficial bacteria that’ll do good things for your gut.

Preparation time: 15 mts

Serves: 4

Ingredients for salad:

  • Baby lettuce leaves – 8 – 10 leaves
  • Avacado – 1 (cut into cubes)
  • Corn – 1 (cook in boiling water for 10 mts and remove the kernels from the cob)
  • Baby tomatoes – 1 handful
  • Blueberries – 1 handfull
  • Onion – 1 (small)

Ingredients for the vinaigrette:

  • Yogurt – 1/2 cup
  • Avacado – a couple of pieces
  • Mint/ basil (as preferred)- a few leaves
  • Juice of 1 lime
  • Chilli powder _ 1/4 tsp
  • Black pepper – 1/4 tsp
  • Salt – 1/4 tsp

Method:

  • Wash and dry all the vegetables.
  • Save a few pieces of avacado for the vinaigrette.
  • Layer the lettuce leaves in the plate. If you want you can tear it into pieces too.
  • Cut and place rest of the vegetables on top of it.
  • In a mixer grind all the ingredients of the vinaigrette.
  • Pour the vinaigrette over the salad.
  • Serve it chilled/room temperature.
