This is an all time Malayalee favourite.. 🙂 If you’re not a beef user you can use this recipe to make Mutton fritters/ Mutton cutlets . Make a large batch and keep it in the freezer. When you need it you can thaw and fry it. It’ll stay in freezer for up to 2 weeks. Keep it in an air tight container, layered with plastic sheets in between to make it easier for you to separate it later. You can use minced beef for this recipe. Since there’s a lot of fat contant in the store bought mince, I ‘m using clean cut meat which will be minced.

This is done in 3 stages :

  1. Cooking of the Beef
  2. Making the Beef mixture
  3. Frying the patties

Stage 1

Ingredients for cooking beef :

  • Beef – 500 g( fat removed and cot into cubes)
  • Potato – 2 (medium size, whole, with skin)
  • Coriander powder – 1/2 tsp
  • Garam masala – 1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Black pepper – 1/2 tsp
  • Salt – 1/2 tsp
  • Water – 1/2 cup

Mix all the ingredients and pressure cook along with the whole potatoes. You can remove the skin of the potatoes later. This way you can keep the nutrients in the potatoes which is just under the skin. Thoroughly wash and scrub the potatoes to remove any soil.

Stage 2

Other ingredients:

  • Onion – 2 (medium) diced
  • Garlic – 4 minced
  • Ginger – 2 cm piece minced
  • Green chilli – 2 minced (optional)
  • Curry leaves – 2 stems (separate the leaves and cut it small)
  • Oil – 2 tsp

Spice mix:

  • Chilli powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Coriander powder – 1 1/2 tsp
  • Garam masala / all spice powder – 1 tsp

Method:

  1. Mince the cooked beef pieces and mash the potatoes with a fork. Do not mash it smooth. Leave it a bit chunky.
  2. Heat a medium size pan and add oil to it.
  3. When the oil gets heated up add ginger and garlic mince.
  4. Let the mince release it’s aroma.
  5. Add the onions, chopped curry leaves  and chopped green chillies and saute it till it looses its colour.
  6. Now add the spice mix and fry it for a few seconds in low fire. Be careful not to burn the spices.
  7. Add in the mince and the mashed potatoes and combine it very well.
  8. Allow this mixture to cool before doing the next step.

Stage 3

Ingredients for frying :

  • Bread crumps – 1 cup ( You can use store bought or dry roast some bread pieces and mill it in a blender.)
  • Egg whites – 2 ( If you don’t mind a bit of eggy taste you need only one whole egg)
  • Oil for deep frying ( for a healthier version make it into small patties and shallow fry)

Method:

  1. Place bread crumps in one plate and slightly beaten egg in a bowl.
  2. When the mince mixture is completely cooled, make small balls of it and flatten and shape it round or oval as you like.
  3. Dip the patty first in egg and then in bread crumps. Coat all sides of the patty with bread crumps. Make sure that the patty is tight.
  4. Now make equal size patties and if you’re not using it right away keep it in the fridge or freezer.
  5. If you’re using the using the same day allow it to sit in the fridge for at least 1/2 an hour to hold everything together.
  6. Deep fry of shallow fry as you wish. Further cooking is only needed for the egg and bread crumps and to heat it through.
  7. So you don’t have to fry for a long time. When frying temperature should be correct.
  8. Do not add the patties before the oil is heated very well, if not the patties will turn soggy.
  9. Before adding the patties add a pinch of plain flour or bread crumps to test.
  10. Enjoy it with some salad and ketchup ! 🙂
