This recipe is specially for all the vegetarians.. In addition to an eggless muffin no plain flour(maida) or butter is added instead wheat flour (Atta) and coconut oil is used, making it healthy. If you want to add eggs to this recipe, reduce the milk to the weight of eggs.. I recommend reducing 1/2 cup of milk for 2 eggs.

Preparation time : 15 mts

Baking time – 20 – 25 mts @ 180 C

Makes  : 20 muffins

Ingredients :

  • Rolled oats – 1 cup
  • Wheat flour (Atta) – 1 cup
  • Apple – 1 (cut into small cubes)
  • Milk – 1 cup
  • Coconut oil – 60 ml
  • Baking soda – 1/2 tsp
  • Baking powder – 3/4 tsp
  • Cinnamon powder – 1/2 tsp
  • Sugar – 3/4 cup (Here I’ve used brown sugar)

Method :

  • Take two clean dry glass bowls. One which is big, for mixing all the ingredients together and the other for mixing the apple.
  • In the smaller bowl add chopped apple, sugar and cinnamon powder and keep it aside for 10 mts.
  • In the other bowl sift together flour, baking soda, baking powder and salt. Sift at least twice.
  • Slowly add oil and milk in to the flour and combine it. Do not over mix.

  • After the mixture has come together add in the apple and sugar and fold and combine.
  • Pour it into a muffin tray which is greased or lined with muffin paper. I’m using a non-stick muffin tray.
  • Sprinkle some chocolate chips to make it look interesting for the kids.

  • Bake in a pre-heated oven @ 180 for ~ 20 to 25 mts.
  • After taking out from the oven allow it to cool.
  • Drizzle some honey while serving to make it even tastier..
