This dish you can serve it with rice or a thinner version can be used as a soup. Pumpkin contains a lot of anti-oxidants, so that’s a good enough reason to start eating pumpkins.. 🙂  This dish contains brown beans too. This is wholesome meal to have as a soup if you’re dieting..  Here I’ve mashed the pumpkins but you can cook it al dente. This dish is done in four stages :

  1. Cooking of Pumpkin.
  2. Cooking of beans.
  3. Mixing 1 and 2 and adding the coconut paste.
  4. Tempering.

Preparation time: 15 mts

Cooking time: 20 mts.

Serves: 4 (If it’s as soup then serves 2)

Ingredients: 

  • Pumpkin – 250 g
  • Brown/red beans – 1/2 cup
  • Green chillies – 2(slit in the middle) (optional)
  • Fresh coconut (grated) – 1/4 cup
  • Cumin seeds – 1/2 tsp
  • Red chilli powder -1/2 tsp(optional)
  • Turmeric powder – 1/4 tsp
  • Water – 1 1/2 cup

Ingredients for tempering:

  • Fresh coconut (grated) – 1/2 cup (optional)
  • Coconut oil – 2 tsp
  • Mustard seeds – 1/4 tsp
  • Dry red chilli – 2
  • Curry leaves – 2 stems

Method:

  1.  Cook pumpkin, green chillies, a pinch of turmeric powder in 1/2 cup of water, to your preference.
  2. Cook the beans in another pan adding 1 cup of water to it. If you’ve soaked the beans overnight you can cook the beans along with the pumpkin itself. Another method is to pressure cook it.
  3. Grind together 1/4 cup grated coconut, cumin seeds, red chilli powder and rest of the turmeric powder to fine paste. If water is needed add 3 table spoons of it.
  4. In the pan the pumpkin was cook add the cooked beans along with the grinded coconut paste and cook for another 2 minutes.
  5. While everything is cooking keep another pan on fire and add oil to it.
  6. when the oil is heated add mustard seeds.
  7. When the mustard seeds starts to splutter add in the dry red chillis and curry leaves. Now add the 1/2 cup grated coconut and roast it till the coconut is dark brown. Be careful not to burn the coconut or i\other ingredients.
  8. Add the roasted coconut to the pumpkin mix and mix it carefully if you don’t want to break the pumpkin. Take it off the fire.
