Idiyappam is one of the favorite Malayalee breakfast. Making of Idiyappam is more on technique than on the Ingredients like bread making.

Serves : 4-5

Ingredients: 

  • Roasted fine rice flour – 2 cups
  • Salt – 1/2 tsp
  • Hot water – ~ 3/4 cup
  • Ghee/oil – 2 tsp(optional)

Method:

  1. In a large bowl (avoid plastic bowls) put the rice flour and salt.
  2. Make a well in the middle and pour hot water one ladle at a time.
  3. Slowly mix the rice flour using a flat ladle.
  4. When you feel that the rice flour is coming together, add water using a table spoon and make a smooth dove.

5. Keep the mix covered with a warm cloth for 5 mts.

6. After 5 mts knead the mix keeping it in the bowl itself.

7. Now you can use an Idiyappam mould and press it to form noodles.

8. You can sprinkle freshly grated coconut on top of the noodle and steam it.
