A refreshing and tasty salad which even kids love to eat.. These mangoes are from my mother’s small kitchen garden.. whenever I go home she packs all her produce for me.. 🙂 . You can have this salad for lunch / dinner preferably with Thai Fish Cakes..

Preparation time : 15 mts

Serves :4

Ingredients :

  • Raw mango sliced thinly – 2
  • Onion – 1/2 diced
  • Tomato (remove seeds) – 1 (you can use cherry tomatoes too )
  • Long beans chopped – 2
  • Coriander leaves – 1 plant, chopped
  • Spring onion chopped – 2 stalks
  • Lemon grass chopped – 1/2 tsp
  • Red /green chilli – 1
  • Roasted skinless peanuts – 1/2 cup ( here I’ve used the skinned version )

Sauce :

  • Fish sauce – 3 tsp
  • Juice of one lime
  • Sugar – 1/2 tsp (I’ve used brown sugar)

Method :

  • Mix all the ingredients and give a small squeeze.
  • Let it sit for atleast 1/2 an hour for it to soften.
  • You can keep it in the fridge in a closed container and serve the salad cold too..
