A filling and healthy sandwich which you can whip up on a tired day. It taste almost like egg sandwich.  You can replace the white bread to wholemeal bread to make it even healthier. 🙂

Makes 2 sandwiches

Ingredients :

  • Fresh tofu – 150 g (cut into bite size pieces)
  • Onion – 1 (small, chopped)
  • Tomato – 1 chopped
  • Ginger chopped – 1tsp
  • Garlic – 1 chopped
  • Green chilli – 1 chopped
  • Curry leaves – 1 stem chopped
  • Salt – 1/4 tsp
  • Oil – 1 tsp

Spices:

  • Chilli powder – 1/2 tsp
  • Coriander powder – 1/4 tsp
  • Turmeric powder – 1/8 tsp
  • Black pepper powder – 1/4 tsp

Method:

  1. In a heated pan add oil and when the oil gets heated up add in the chopped onions, garlic, ginger chilli, and curry leaves one by one and saute in between.
  2. When the onions are soft, add in the spices along with the chopped tomato and salt.
  3. If you want to bite on your tomatoes saute only for a minute and then add in the tofu. Mix well and cook covered with a lid for another minute. Your sandwich filling is ready !

  5. If you’re not a fan of tomatoes then cook it further for another minute or two till the tomatoes dissolves and blend it with other ingredients. Now add the tofu and cook as I said in step 3.
