A soup which can be served as a complete meal. This soup contains proteins, carbs and vegetables required for the diet conscious ones. Especially on a day when you had a heavy lunch. This can be served to toddlers who is not allergic to mushrooms.

Ingredients for the meat balls:
- Chicken mince – 150 g (here I’ve taken 1 fresh chicken breast and minced it in the mixer, alternately you can use any cut of chicken, debone it and mince it in the mixer )
- Oats – 1/2 cup (rolled or quick oats)
- Onion – 1 (small, chopped)
- Ham/Prosciutto – 2 slices (chopped) You can use bacon to make it yummy !
- Ginger chopped – 1/2 tsp
- Garlic chopped – 1/2 tsp
- Green chilli – 1 chopped
- Salt – 1/4 tsp
- Ground pepper – 1/8 tsp
Ingredients for the soup:
- Chicken stock / water – 3 1/2 cups
- Mushroom – 4-5 sliced (here I’ve used button mushrooms, you can use any of your favourite ones. Be careful when using the dried mushroom, it can totally change the taste of the soup )
- Thyme – 1/4 tsp dried (or 4-5 sticks of fresh ones)
- Cardamom – 4
- Cloves – 4
- Cinnamon stick – 1′
- Salt – 1/2 tsp
- Ground black pepper – 1/4 tsp
- Spring onions – 1 salk
Method:
- Mince the chicken and mix together all the ingredients for the meat balls. Make small lime size balls and keep it aside.
- In a large sauce pan add all the ingredients for the soup and slowly drop in the meat balls.
- Cook in medium heat till the soup starts to boil and the simmer and cook further for 10 more minutes.
- When the meat balls are cooked it’ll start to flot on top of the soup. Try not to overcook the meat balls otherwise it’ll become hard.
- If you like smooth soup add 1 table spoon of corn flour in 1/4 cup water and add to the boiling soup.
- When the soup starts to thicken switch off the gas.
- Your soup is ready ! 🙂
Notes:
- To make the tangy sauce, mix together 1 tsp of white vinegar, 1/2 tsp of light soy sauce, 1/2 tsp of honey and 1 chopped green chilli. This can be served separately.
