A filling and healthy sandwich which you can whip up on a tired day. It taste almost like egg sandwich. You can replace the white bread to wholemeal bread to make it even healthier. 🙂

Makes 2 sandwiches
Ingredients :
- Fresh tofu – 150 g (cut into bite size pieces)
- Onion – 1 (small, chopped)
- Tomato – 1 chopped
- Ginger chopped – 1tsp
- Garlic – 1 chopped
- Green chilli – 1 chopped
- Curry leaves – 1 stem chopped
- Salt – 1/4 tsp
- Oil – 1 tsp
Spices:
- Chilli powder – 1/2 tsp
- Coriander powder – 1/4 tsp
- Turmeric powder – 1/8 tsp
- Black pepper powder – 1/4 tsp
Method:
- In a heated pan add oil and when the oil gets heated up add in the chopped onions, garlic, ginger chilli, and curry leaves one by one and saute in between.
- When the onions are soft, add in the spices along with the chopped tomato and salt.
- If you want to bite on your tomatoes saute only for a minute and then add in the tofu. Mix well and cook covered with a lid for another minute. Your sandwich filling is ready !
- If you’re not a fan of tomatoes then cook it further for another minute or two till the tomatoes dissolves and blend it with other ingredients. Now add the tofu and cook as I said in step 3.
