A tasty dish which is a party favorite. The three main ingredients are the prawns, garlic and chilli. If you’re not a chilli fan you can replace it with chilli flakes according to your preference.

Ingredients :

  • Prawns – 250 g ( wash and clean the prawns. Take the head off the prawns and cut off the legs too. Cut the shell lengthwise where the vein is and remove the vein .)
  • Garlic – 6 (chopped)
  • Chilli paste* – 1 tsp
  • Butter / ghee – 1 tsp
  • Pickled caper berries – 1 table spoon
  • Brine of the pickled caper berries – 1 tsp
  • Salt – a pinch
  • Ground black pepper – 1/4 tsp
  • Parsley / coriander leaves (according to taste) – 1 plant chopped

Method:

  1. Marinate the prawns with all ingredients except butter, and parsley.
  2. In a hot pan add butter/ ghee and when it melts and reach almost smoking point add the prawns cut side down and press it down with a heavy pan or skillet.
  3. Cook for just 1 minute. Do not throw away the remaining marinade. Add rest of the marinade to pan and cook.
  4. Sprinkle the parsley/coriander leaves and give it a mix.
  5. Serve hot sprinkling some more parsley /coriander leaves or even some spring onions.

* To make chilli paste.

  • Dry red chilli – 7
  • Small shallots – 4
  • Oil – 2 table spoon

In a hot pan when the oil gets heated up add the chillies and shallots and saute till the onions are soft and chilies change colour tio deep red.

When cooled grind it fine in a mixer. You can make larger batch of this chilli paste and keep in the fridge. It’ll last for 6 months.
