A muffin recipe for the beginner’s. I would still call myself a beginner too. This recipe is a fool-proof one where you will not make any mistakes. You can add on flavours as you please like, vanilla essence or any of your favourite spice. Cinnamon / cloves or even both together goes very well with carrots. Having one of these muffins will not make you fell guilty!

Baking time : 25 mts @ 150 C / 300 F

Ingredients :
- 2 table spoon butter
- 1/2 cup molasses sugar
- 2 small eggs
- 1/2 cup full cream milk
- 1 cup grated fresh carrots
- 1 1/2 cup plain flour
- 1/2 tsp vanilla essence ( optional )
Method :
- Pre-heat the oven @ 150 C
- Measure the flour and swift it twice and measure again to make 1 1/2 cups.
- In another large mixing bowl beat the butter and sugar till it’s soft and fluffy.
- Beat one egg at a time and mix well.
- Pour in the milk and incorporate well.
- Add in the grated carrots and mix gently using a wooden spoon.
- Mix the flour one ladle at a time and mix it well. Do not over mix, just enough to mix everything together.
- Bake for around 20 mts and see if the muffin is cooked through.
- Allow the muffin to completely cool down before decorating it.

- Do not try to open the oven door unnecessarily.
