Who doesn’t love Sunday roast !!.. This is a kids friendly version of the Sunday roast which you can cook completely in gas or oven. If you’re preparing in the oven marinate the chicken with the spice mix for an hour minimum and mix all other ingredients except tomato and roast it in the oven @ 180 C for 25 -30 mts. 10 mts before taking it out, add the tomatoes and roast further. Here I’m illustrating how to cook it in gas.

Serves : 4
Ingredients :
- Chicken with bone – 600 – 750 g (skinless or with skin)
- Onion – 3 (medium)
- Tomato – 1
- Garlic – 10
- Ginger – 1″
- Green chilli – 3(slit in the middle, optional)
- Curry leaves – a handful
Spice mix :
- Chilli powder – 1 1/2 tsp (you can replace it with milder paprika or kashmiri chilli pd)
- Coriander powder – 2 tsp
- Turmeric powder – 1/4 tsp
- Garam masala – 1 tsp
- Black pepper powder – 1/2 tsp
- Cumin powder – 1/4 tsp (optional)
Other ingredients:
- Oil – 2 tsp
- Salt – 1/2 + 1/4 tsp
Method:
- Marinate the chicken pieces with the spice mix and keep it in the fridge for at-least an hour covered. you can keep it overnight.
- When you’re ready to roast the chicken, take it out of the fridge add 1/2 tsp salt and thaw for 1/2 an hour.
- In a well heated pan add oil and when the oil is heated add the chicken pieces and fry turning both sides for a few minutes. This is just to brown the outside.
4. Once the chicken is brown add rest of the ingredients and cover the pan with a tight lid and cook it for 15 minutes in low fire. Since we’re not adding any water, it should cook in its own juices. Don’t allow the meat to dry out, if you think it needs some water sprinkle some on it.
5. When the chicken is cooked switch off the fire and sprinkle 2 -3 pinches of Garam masala.
Tips:
- The important thing to note in this recipe is not to add salt while marinating the chicken. If you add salt and keep it for a long time chicken will be very dry and not juicy.
- Another thing is the fire, keep it low.
