This is another party favorite. This recipe can be used to barbecue the chicken too. You can use any cut of chicken, only cooking time will be different. If you’re using big pieces it’ll take around 40 – 45 mts.  Since we’re adding soy sauce there is no need to add salt separately.

Preparation time : 10 mts

Grilling time – 20 -25 mts @ 220 C

To keep it warm, keep it in the oven itself coved with foil paper @ 80 – 100 C.

Serves : 4

Sauce mix:

  • Onion – 1 (small)
  • Garlic – 4
  • Ginger – 1/2 “
  • Coriander leaves – 1 plant
  • Tomato puree – 2 tsp(1tsp of tomato paste)
  • Soy sauce – 3 tsp
  • Green/red chilli sauce – 2 tsp
  • Chilli powder – 1 tsp (optional)
  • Cumin powder – 1/2 tsp
  • Honey – 1 tsp (or 1 tsp brown sugar/jaggary)
  • Juice of 1 lime
  • Oil – 2 tsp

Grind all the ingredients to a fine puree.

Other ingredients;

Chicken – 500 g

Butter/ghee – 1 tsp (optional)

Method:

  1. Marinate the chicken pieces with the sauce and keep it in the fridge for atleast an hour. You can keep it overnight as well. Do not throw away the remaining sauce.
  2. In a small pan bring the sauce to boil and simmer for 5 mts. When it’s cooled you can keep it in the fridge and use as needed.
  3. Allow the chicken pieces to come to room temperature before grilling.
  4.  Grill the chicken @ 220C for 20 – 25 mts turning once or twice.
  5. Pour a bit of  the cooked sauce over the chicken.
  6. Serve hot with the reserved sauce, onion rings and lime wedges.

Notes:

  • Even after 25 mts the edges of the chicken have’t turned brown grill for another 5 mts.
  • Once the chicken is cooked it’ll turn brown very fast. Do not allow the meat to dry out.
  • You can use the same sauce as a pizza sauce too.
