This is a simple, fresh, and healthy summer salad.
Rocket leaves are peppery and if you find that not pleasing, switch to lettuce or baby spinach.
You can mix the dressing ingredients in a small jar and can be kept in fridge till needed. It will last in the fridge for a few days.

Ingredients for the salad mix:
- Rocket leaves – 2 handfuls or half packet
- Watermelon – 2cups (cut into bite size pieces)
- Pomegranate – ½
- Blue berry – 1 handful
- Parmesan cheese – 10-12 shavings or according to personal preference
Ingredients for dressing:
- Juice of ½ orange
- Juice of ½ lemon
- Olive oil – 2tsp
- Honey or agave nectar – 1tsp
- Mint leaves chopped – 12-15 leaves
- Black pepper – ½ tsp
- Salt – ¼ tsp
