This is another one pot meal which is healthy, filling and easy to prepare. which can be kids lunch dish. If you marinate the chicken in advance ,this meal can be prepared in 20 mts. you can keep the marinated chicken in the fridge for a maximum of 24 hrs.. Since the chicken is grilled and not fried its healthy too !.. If you don’t have a grill you can shallow fry the chicken pieces with less oil..

Serves – 4

Ingredients:

  • Skinless chicken breast – 2 (cut into long thin slices)
  • Yogurt/curd – 1/2 cup
  • Chilli powder – 1 tsp (if you want it more spicy add 1/2 tsp more.. or else, you can substitute it with Cayenne pepper)
  • Cumin powder – 1/2 tsp
  • Garam masala – 1 tsp (If you don’t have this you can dry roast and grind 1/2 cinnamon stick, 5 cloves, 3 cardamom pods and 1/2tsp fennel seeds )
  • Turmeric Powder 1/4 tsp
  • Coriander powder – 1tsp
  • Tomato paste – 1tsp (optional)
  • Olive oil – 1tsp

 Ingredients for Macaroni :

  • Macaroni – 1 cup
  • Onion – 1 small(cut small)
  • Garlic – 3(chopped)
  • Plain flour – 1 tsp
  • Milk – 1/4 cup
  • Black pepper – 1/2 tsp
  • Oil / butter – 2 tsp
  1. Marinate the chicken pieces at least an hour and grill it for 15-20 mts at 220 C.
  2. Fill a medium size sauce pan with plain water and add Macaroni , 1tsp oil and 1tsp salt. The water level should be 3 times more than the level of Macaroni. Bring the water to boil and cook the pasta till it’s 3/4 done. Add more water if needed. Never allow the pasta to turn mushy.
  3. When the Macaroni is done drain it using a colander and save a cup of pasta water.
  4. Heat oil in a wide pan in low fire  and saute the garlic. When the garlic looses its colour, add the plain flour and saute till the plain flour is roasted. It’ll turn light brown .
  5. Mix in the milk slowly and form a paste without making any lump.
  6. Now you can add in the drained macaroni and combine well .
  7. Add the reserved water bit by bit and make a thick smooth pasta.
  8. Now its time to add the grilled chicken and ground black pepper.
  9. Fold the pasta and check for seasoning. If more salt is needed add 1/4 tsp or less since there is already salt in the water we used for cooking pasta.

 Notes :

  1. When roasting the plain flour heat should be at the minimum. And no lumps when adding milk. This is the only place you should be careful.
  2. Don’t burn the garlic, if it turns slightly brown the dish will turn bitter.
  3. If you want you can avoid the milk completely and use only the reserved water.
