A quick and easy crab roast, as the name says, is a 10 minute preparation for the weekend. If you get the crab cleaned, then its even easier ! Here I’ve cooked the crab ahead of time in boiling water adding salt and turmeric to it. Drain the water and when the crab is cooled, store it in the fridge to use it later or even next day.  Since the crab is already cooked , you don’t have to toil in the kitchen when you can relax and have a great time with your family, friends or just your ‘me time’.

Preparation time : 10 mts

Cooking time : 15 + 10 mts

Serves : 4

Ingredients for boiling:

  • 500g soft shell crabs
  • 1/2 tsp of turmeric
  • 1/2 tsp of slat
  • 2 cups of water

Bring  water to rolling boil. Add turmeric ,salt and crabs. Cook for 10 – 15 mts.

Ingredients for final cooking:

  • 1 large onion chopped
  • 3 garlic minced
  • a small piece of ginger minced
  • 2 stems of curry leaves
  • 1 tomato cubed (optional )
  • 2 table spoons of oil ( preferably coconut oil )
  • 1/4 tsp salt ( I’m using coarse sea salt )

Dry powdered spices:

  • 1/4 tsp turmeric powder
  • 1/2 tsp chilli powder
  • 1 tsp coriander power
  • 1 tsp meat masala powder
  • 1 table spoon of crushed black pepper

Method :

  • Heat oil in a pan and add 1/2 the black pepper, garlic, ginger and onion.
  • Saute it till its soft.
  • Add in the curry leaves.
  • Lower the heat and add the dry spices and fry the spices till the pungent smell is gone.
  • Add in the cooked crab, cover and cook for 2 minutes.
  • Add the remaining crushed black pepper, tomatoes and take it off the heat and serve.
  • It’s best to serve immediately.

Notes :

  • Be carefull not to burn the powdered spices. If in doubt mix all the spices and add 1/2 cup of water and add to the pan.
